Cookie House
Cais do Sodré, Lisbon
Act I · Paris
Croissant outside,cookie dough inside.
The crookie was born in Paris: a croissant filled with cookie dough. When it reached Rua de S. Paulo, João Vaz Antunes and pastry chef Maksym Fishchunk did not copy it. They reinvented it. The precision of the layers stayed; Lisbon's nerve came in: pistachio and raspberry, hazelnut, dark chocolate with caramel and, yes, chouriço. Paris invented. Lisbon changed the recipe.
